Craving a fun, bite-sized snack that’s packed with bold taco flavors and a zesty ranch twist? These Taco Ranch Bites are crispy, cheesy, and full of Tex-Mex goodness! They make the perfect appetizer for parties, game nights, or a quick and easy snack.


Ingredients

  • 12 mini tortilla rounds (or cut small circles from regular tortillas)
  • ½ lb ground beef or chicken
  • 1 tablespoon taco seasoning
  • ¼ cup water
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup sour cream
  • 2 tablespoons ranch dressing
  • ¼ cup diced tomatoes
  • 2 tablespoons chopped green onions
  • ¼ cup shredded lettuce
  • ¼ teaspoon red pepper flakes (optional, for heat)

Instructions

Step 1: Prepare the Tortilla Cups

  1. Preheat your oven to 375°F (190°C).
  2. Press mini tortillas into a lightly greased muffin tin to form cup shapes.
  3. Bake for 5-7 minutes until lightly golden and crispy. Remove and set aside.

Step 2: Cook the Taco Meat

  1. In a skillet over medium heat, cook the ground beef or chicken until fully browned.
  2. Drain excess grease, then stir in taco seasoning and water. Simmer for 2-3 minutes, stirring occasionally.

Step 3: Assemble the Bites

  1. Fill each baked tortilla cup with a spoonful of the seasoned taco meat.
  2. Sprinkle shredded cheese on top.
  3. Return to the oven for 3-5 minutes until the cheese melts.

Step 4: Add Toppings & Serve

  1. In a small bowl, mix sour cream and ranch dressing.

  2. Drizzle the ranch mixture over the bites and top with diced tomatoes, green onions, and shredded lettuce.

  3. Sprinkle with red pepper flakes if you like a little spice!

  4. Serve warm and enjoy!

  • Use Fresh Tortillas – Softer tortillas will bake into crispier cups.
