- ½ lb ground beef or chicken
- 1 tablespoon taco seasoning
- ¼ cup water
- ½ cup shredded cheddar or Mexican blend cheese
- ¼ cup sour cream
- 2 tablespoons ranch dressing
- ¼ cup diced tomatoes
- 2 tablespoons chopped green onions
- ¼ cup shredded lettuce
- ¼ teaspoon red pepper flakes (optional, for heat)
Instructions
Step 1: Prepare the Tortilla Cups
- Preheat your oven to 375°F (190°C).
- Press mini tortillas into a lightly greased muffin tin to form cup shapes.
- Bake for 5-7 minutes until lightly golden and crispy. Remove and set aside.
Step 2: Cook the Taco Meat
- In a skillet over medium heat, cook the ground beef or chicken until fully browned.
- Drain excess grease, then stir in taco seasoning and water. Simmer for 2-3 minutes, stirring occasionally.
Step 3: Assemble the Bites
- Fill each baked tortilla cup with a spoonful of the seasoned taco meat.
- Sprinkle shredded cheese on top.
- Return to the oven for 3-5 minutes until the cheese melts.
Step 4: Add Toppings & Serve

In a small bowl, mix sour cream and ranch dressing.
