- 4 cod fillets (about 6 oz each)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup full-fat coconut milk
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 teaspoons honey
- 2 garlic cloves, minced
- ½ teaspoon red pepper flakes (optional, for heat)
- 1 tablespoon fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
Preheat your oven to 375°F (190°C).
Lightly grease a baking dish with olive oil.
Pat the cod fillets dry with a paper towel.
Season both sides with salt, pepper, paprika, garlic powder, and onion powder.
In a mixing bowl, whisk together the coconut milk, lemon juice, lemon zest, honey, minced garlic, and red pepper flakes (if using).
Place the cod fillets in the prepared baking dish.
Pour the coconut lemon cream sauce over the fillets, ensuring they are well-coated.
Bake for 15-18 minutes, or until the cod is opaque and flakes easily with a fork.
Remove from the oven and sprinkle with fresh parsley.
Serve with lemon wedges on the side for an extra burst of citrus flavor.
Notes
- Use Fresh Cod: Fresh fillets provide the best flavor, but frozen cod works if properly thawed.
- Don’t Overbake: Cod cooks quickly, so keep an eye on it to avoid dryness.
