  • 2 pounds stew meat (chuck meat)
  • 1 large onion
  • 4 to 5 carrots
  • 3 cups golden potatoes
  • 4 cloves garlic
  • 2 quarts beef stock
  • Fresh herbs (rosemary and thyme)
  • For the dumplings: flour, baking powder, sea salt, butter, milk

Instructions

  1. Chop the onion, carrots, and potatoes into bite-sized pieces and mince the garlic.
  2. In a large pot or Dutch oven, heat oil over medium-high heat. Season the beef with salt and pepper and brown on all sides for about 5–7 minutes. Remove from pot.
  3. Sauté onions until soft (about 3 minutes), then add garlic, carrots, and potatoes; stir in flour.
  4. Return the browned beef to the pot and add beef stock along with rosemary and thyme. Stir in tomato paste and bring to a boil before reducing heat to low. Cover and simmer for about 90 minutes until tender.
  5. For dumplings: In a bowl, mix flour, baking powder, salt, and butter until crumbly. Gradually add milk until a dough forms.
  6. Drop spoonfuls of dumpling mixture onto the stew during the last 15–20 minutes of cooking without lifting the lid.
