  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1 (15 oz) can pure pumpkin puree
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cups plus 1 Tbsp sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line two muffin pans with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.
  3. In a stand mixer bowl, combine pumpkin puree, vegetable oil, and eggs. Mix in sugar until well combined.
  4. Gradually add the dry ingredients to the wet mixture on low speed until just combined.
  5. In a small bowl, mix cinnamon and remaining sugar for topping.
  6. Fill muffin cups two-thirds full with batter and sprinkle with cinnamon sugar.
  7. Bake for 20-25 minutes or until golden brown; a toothpick should come out clean.
  8. Cool for about 5 minutes in the pan before transferring to a rack.
