  • 16 oz colby jack cheese
  • 8 oz mozzarella cheese
  • 8 oz sharp cheddar cheese
  • 3 tablespoons salted butter
  • 3 tablespoons flour
  • 12 oz can evaporated milk
  • 2 cups heavy cream
  • 1 tablespoon dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13 casserole dish with butter.
  2. Grate the cheeses and mix half for layering later.
  3. Cook the cavatappi pasta in salted boiling water until al dente; drain.
  4. In a large skillet over medium-low heat, melt butter. Stir in half of the seasoning mix and whisk in flour until lightly bubbling.
  5. Gradually add evaporated milk and heavy cream while whisking until smooth; bring to a low boil.
  6. Stir in half of the shredded cheese mixture until melted into the sauce.
  7. Combine cooked pasta with the creamy cheese sauce until well-coated.
  8. Layer half of the macaroni in the greased dish, sprinkle with half of the remaining cheese, then add the rest of the macaroni followed by another layer of cheese.
  9. Bake for about 30 minutes; broil for an additional few minutes if desired.
