- 8 ounces rotini pasta
- 1 pound salmon (cut into 1-inch pieces)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 tablespoon minced garlic
- 2 tablespoons tomato paste
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- ¼ cup fresh basil (chopped)
- Chopped parsley (for garnish)
Instructions
- Cook the rotini pasta in boiling salted water until al dente, then drain and reserve some pasta water.
- Season the salmon with olive oil, paprika, garlic powder, salt, pepper, and red pepper flakes. Cook in a skillet over medium heat for about 4–5 minutes on each side until done.
- In the same skillet, sauté minced garlic in olive oil until fragrant. Stir in tomato paste and heavy cream; mix well before adding parmesan cheese, salt, pepper, and chopped basil.
- Combine cooked pasta with the sauce and gently fold in the salmon. Adjust consistency with reserved pasta water if needed.
