- 1 pre-baked deep dish pie shell
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3/4 cup mayonnaise
- 2 tbsp shredded Parmesan cheese
- Salt and pepper (to taste)
Instructions
- Prepare the tomatoes by placing them in a colander, sprinkling with salt, and letting them drain for 10 minutes. Pat dry with paper towels.
- Layer the tomato slices evenly in the prepared pie shell. Top with chopped basil and red onion, seasoning with salt and pepper.
- In a mixing bowl, combine mozzarella, cheddar, and mayonnaise until blended. Spread this mixture over the layered tomatoes and sprinkle with Parmesan.
- Preheat oven to 350°F (175°C) and bake for 30–35 minutes until the cheese is lightly browned.
