  • 5 Roma tomatoes (peeled and sliced)
  • 10 fresh basil leaves (roughly chopped)
  • 1/2 cup red onion (chopped or thinly sliced)
  • 1 pre-baked deep dish pie shell
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3/4 cup mayonnaise
  • 2 tbsp shredded Parmesan cheese
  • Salt and pepper (to taste)

Instructions

  1. Prepare the tomatoes by placing them in a colander, sprinkling with salt, and letting them drain for 10 minutes. Pat dry with paper towels.
  2. Layer the tomato slices evenly in the prepared pie shell. Top with chopped basil and red onion, seasoning with salt and pepper.
  3. In a mixing bowl, combine mozzarella, cheddar, and mayonnaise until blended. Spread this mixture over the layered tomatoes and sprinkle with Parmesan.
  4. Preheat oven to 350°F (175°C) and bake for 30–35 minutes until the cheese is lightly browned.
