    • 1 bay leaf – Adds aromatic richness.
    • 4 cups beef broth – The base of the soup.
    • 2 large potatoes, peeled and diced – For added heartiness.
    • 2 large carrots, peeled and sliced – Adds natural sweetness and texture.
    • 1 bell pepper, diced – Adds color and crunch.
    • 1 can (14 oz) diced tomatoes – For a bit of acidity and richness.
    • Salt and pepper, to taste – Enhances the flavors.
  • For Garnish:
    • Fresh parsley, chopped – For a fresh finish.
    • Sour cream (optional) – Adds creaminess and tang.

Instructions

Step 1: Brown the Beef
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat in batches, browning it on all sides. Once browned, remove the beef and set it aside.

Step 2: Sauté the Vegetables
In the same pot, add the chopped onion and garlic. Sauté for 4-5 minutes, until the onions are soft and translucent.

Step 3: Add the Spices
Stir in the sweet paprika, smoked paprika, caraway seeds, thyme, and bay leaf. Cook for 1-2 minutes to allow the spices to bloom and become fragrant.

Step 4: Add the Broth and Vegetables
Return the browned beef to the pot and add the beef broth, diced potatoes, carrots, bell pepper, and canned tomatoes. Stir everything to combine.

Step 5: Simmer the Soup
Bring the soup to a boil, then reduce the heat to low. Let it simmer for 1 to 1.5 hours, or until the beef is tender and the vegetables are soft. Stir occasionally.

Step 6: Season the Soup
Taste and season the soup with salt and pepper to your liking. If you prefer a thicker soup, mash a few potatoes with the back of a spoon to thicken the broth.

Step 7: Serve and Garnish
Ladle the soup into bowls and garnish with freshly chopped parsley. If desired, add a dollop of sour cream on top for a creamy finish.

Notes

  • Let it Simmer – The longer the soup simmers, the more the flavors develop, so be patient!
  • Use Bone-In Beef – If you have time, using bone-in beef for more flavor is a great option.
  • Adjust the Paprika – If you like a spicier soup, feel free to add a pinch of cayenne pepper or hot paprika.
  • Make it Ahead – Goulash soup tastes even better the next day after the flavors have had time to meld together.
