  • 1 pound turkey turkey kielbasa (cut into ½ inch pieces)
  • 2 garlic cloves (minced)
  • ½ cup yellow onion (finely diced)
  • ½ cup carrots (peeled and finely diced)
  • ½ cup celery (finely sliced)
  • 4 cups chicken stock
  • 1 ½ pounds potatoes (cut into cubes)
  • 2 cups heavy cream or whole milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a Dutch oven or large pot, heat olive oil over medium-high heat. Add turkey turkey kielbasa pieces and cook until browned, about 5-6 minutes. Remove and set aside.
  2. In the same pot, sauté minced garlic, onions, carrots, and celery for about 2 minutes until fragrant.
  3. Pour in chicken stock and add cubed potatoes. Bring to a boil, then reduce heat to low. Cover and simmer for approximately 15 minutes until potatoes are tender.
  4. Stir in the cooked turkey turkey kielbasa along with heavy cream or milk, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low heat for an additional 5-10 minutes until cheese melts.
  5. Just before serving, stir in chopped parsley and ladle into bowls.
