  • 1 1/2 cups fresh breadcrumbs
  • 3 tablespoons milk
  • 1/2 cup finely minced onion
  • 4 garlic cloves, pressed

  • 1 1/2 teaspoons Italian seasoning
  • 1/2 cup grated parmesan cheese
  • 1 large egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • Salt and pepper to taste
  • Olive oil for frying
  • Ghee or unsalted butter for sauce
  • Pumpkin puree, chicken stock, and heavy cream for the sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine breadcrumbs and milk; let sit for a few minutes.
  3. Add minced onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, egg, and yolk; mix well.
  4. Gently incorporate ground turkey along with salt and pepper until just combined.
  5. Form meatballs (about 2 tablespoons each) and chill in the freezer for 20 minutes.
  6. Heat olive oil in a skillet over medium-high heat; sear meatballs until brown on all sides (about 10 minutes).
  7. In the same skillet, melt ghee/butter with olive oil; sauté onion until softened.
  8. Stir in garlic and seasonings; then add pumpkin puree, chicken stock, salt, and pepper; simmer for a few minutes.
  9. Whisk in heavy cream and parmesan cheese; gently add meatballs to warm through.
