Ingredients
For the Roll-Ups:

6 large eggs

½ cup milk

½ tsp salt

¼ tsp black pepper

1 tbsp butter (or cooking spray)

6 turkey sausage links (cooked and sliced or crumbled)

¾ cup shredded cheddar cheese

6 medium flour tortillas (8-inch)

¼ cup chopped spinach

2 tbsp chopped green onions
For Serving:

Instructions
Step 1: Prepare the Eggs

In a mixing bowl, whisk together the eggs, milk, salt, and pepper until fully combined.

Heat butter in a non-stick skillet over medium heat.

Pour in the egg mixture and scramble gently, stirring often, until eggs are just set. Remove from heat.
Step 2: Cook the Turkey Sausage

If using uncooked turkey sausage, cook in a skillet until browned and fully cooked.

Slice into small pieces or crumble into bits. Set aside.
Step 3: Assemble the Roll-Ups

Lay out tortillas on a clean surface.

Spoon scrambled eggs evenly across the center of each tortilla.
