Ingredients

For the Roll-Ups:

  • 6 large eggs

  • ½ cup milk

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp butter (or cooking spray)

  • 6 turkey sausage links (cooked and sliced or crumbled)

  • ¾ cup shredded cheddar cheese

  • 6 medium flour tortillas (8-inch)

Optional Add-Ins:

  • ¼ cup diced bell peppers

  • ¼ cup chopped spinach

  • 2 tbsp chopped green onions

For Serving:

  • Salsa or hot sauce

  • Fresh fruit or yogurt on the side


Instructions

Step 1: Prepare the Eggs

  1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until fully combined.

  2. Heat butter in a non-stick skillet over medium heat.

  3. Pour in the egg mixture and scramble gently, stirring often, until eggs are just set. Remove from heat.

Step 2: Cook the Turkey Sausage

  1. If using uncooked turkey sausage, cook in a skillet until browned and fully cooked.

  2. Slice into small pieces or crumble into bits. Set aside.

Step 3: Assemble the Roll-Ups

  1. Lay out tortillas on a clean surface.

  2. Spoon scrambled eggs evenly across the center of each tortilla.

  3. Add cooked turkey sausage on top of the eggs.

  4. Sprinkle cheddar cheese generously over each.

  5. Add optional veggies if using.

Step 4: Roll & Heat

  1. Fold the sides of the tortilla inward, then roll up tightly from the bottom to secure the filling.

  2. Place seam-side down on a skillet or grill pan and toast over medium heat for 2-3 minutes per side, until golden and cheese is melted.

  3. Alternatively, wrap each in foil and warm in a 350°F oven for 10 minutes or microwave for 30-45 seconds.

Step 5: Serve & Enjoy

 

  1. Slice in half for easier handling or leave whole for grab-and-go convenience.

  2. Serve warm with salsa or hot sauce for a little kick.

Notes

Warm the Tortillas – A few seconds in the microwave makes them more pliable.
Don’t Overfill – Too much filling can make it hard to roll up.
Use Leftovers – Great way to use up extra eggs, veggies, or cooked meats.
Wrap Individually – If freezing, wrap each in foil or parchment, then store in a freezer bag.
