For the Salmon:
- 4 salmon fillets (skin-on or skinless)
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ¼ teaspoon red pepper flakes (optional, for heat)
For the Parmesan Cream Sauce:
- 1 tablespoon butter
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1 cup fresh spinach
- ½ cup chicken or vegetable broth
- Salt & pepper, to taste
Instructions
Step 1: Cook the Salmon
- Pat the salmon fillets dry with a paper towel and season both sides with salt, pepper, paprika, and red pepper flakes.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the salmon, skin-side down, and cook for 4-5 minutes until golden brown.
- Flip the salmon and cook for another 3-4 minutes until cooked through. Remove from the pan and set aside.
Step 2: Make the Parmesan Cream Sauce
- In the same pan, add butter and minced garlic. Sauté for 30 seconds until fragrant.
- Stir in the sun-dried tomatoes and cook for another 1-2 minutes.
- Pour in the broth and let it simmer for 2 minutes to deglaze the pan.
- Lower the heat and add the heavy cream, parmesan cheese, and Italian seasoning. Stir until smooth.
- Add the fresh spinach and let it wilt into the sauce. Season with salt & pepper to taste.
Step 3: Combine & Serve
- Return the salmon fillets to the pan, spooning the sauce over the top.
- Let everything simmer for 2-3 minutes, allowing the flavors to meld together.
- Remove from heat and serve immediately.
