1½ lbs ground beef
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
2 eggs
¼ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp dried parsley
½ tsp smoked paprika
For the Mashed Potato Topping:
2½ cups mashed potatoes (about 3–4 medium potatoes)
2 tbsp butter
¼ cup milk
Salt and pepper, to taste
½ cup shredded cheddar cheese (plus more for topping)
Toppings:
¼ cup crumbled cooked turkey bacon or beef bacon
¼ cup green onions, chopped
½ cup shredded cheddar cheese
Sour cream (optional, for serving)
Instructions
Step 1: Preheat and Prep
Preheat your oven to 375°F (190°C).
Grease a loaf pan or line with parchment paper for easy removal.
Step 2: Make the Meatloaf Mixture
In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, and seasonings.
Mix until everything is just combined. Don’t overmix to avoid a dense texture.
Step 3: Shape and Bake
Press the meatloaf mixture into the loaf pan, smoothing the top.
