  • 1 lb lean ground beef
  • 1 cup chopped onion
  • 1 cup sliced mushrooms
  • 2 stalks celery, diced
  • 1 green bell pepper, seeded and diced
  • 10 oz uncooked elbow macaroni
  • (14.5 oz) can stewed tomatoes, undrained
  • 8 oz tomato paste
  • 1 cup vegetable stock
  • 1 1/2 cups shredded sharp cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook elbow macaroni according to package directions until al dente; drain and set aside.
  3. In a large skillet over medium heat, brown the ground beef along with onion, mushrooms, celery, and bell pepper for about 10 minutes. Season with salt and pepper.
  4. Blend together stewed tomatoes, tomato paste, vegetable stock, sugar, Italian seasoning, garlic powder, salt, and pepper until smooth. Stir in half of the cheddar cheese.
  5. In a baking dish, combine the meat mixture with cooked macaroni and pour the sauce over it; stir well. Top with remaining cheddar cheese.
  6. Bake for about 30 minutes or until golden brown and bubbly.
