  • 1 lb lean ground beef
  • 1 cup chopped onion
  • 1 cup sliced mushrooms
  • 2 stalks celery, diced
  • 1 green bell pepper, seeded and diced
  • 10 oz uncooked elbow macaroni
  • 1 (14.5 oz) can stewed tomatoes, undrained
  • 8 oz tomato paste
  • 1 cup vegetable stock
  • 1 1/2 cups shredded sharp cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the elbow macaroni in boiling water until al dente; drain and set aside.
  3. In a large skillet over medium heat, brown the lean ground beef with onion, mushrooms, celery, and green bell pepper until tender.
  4. In a blender, combine stewed tomatoes, tomato paste, vegetable stock, sugar, Italian seasoning, garlic powder, salt, and pepper; blend until smooth.
  5. Stir in half of the shredded cheddar cheese into the sauce mixture.
  6. In a baking dish, combine the beef mixture with cooked macaroni; pour the sauce over and mix well. Top with remaining cheese.
  7. Bake for approximately 30 minutes until golden brown on top.
