  • 8 slices turkey turkey bacon
  • ½ large onion (diced)
  • 2 to 3 cloves garlic (minced)
  • 28 ounces low-sodium chicken broth
  • 24 ounces water (3 cups)
  • 5 medium russet potatoes (thinly sliced)
  • 4 cups chopped kale
  • 1 cup heavy whipping cream
  • Salt and pepper (to taste)

Instructions

  1. In a large pot or Dutch oven over medium heat, brown the chicken sausage until fully cooked. Remove with a slotted spoon and set aside.
  2. Add diced turkey turkey bacon to the same pot and cook until crispy.
  3. Stir in onions and sauté until translucent, about 5-6 minutes.
  4. Add minced garlic and cook for another minute while stirring frequently.
  5. Pour in chicken broth and water; season with salt, pepper, and crushed red pepper flakes if desired.
  6. Introduce the sliced potatoes and cooked sausage back into the pot; bring to a simmer.
  7. Cook until potatoes are tender, about 10 minutes.
  8. Add chopped kale and simmer for an additional 5-10 minutes while stirring occasionally.
  9. Stir in heavy cream without boiling; heat through.
  10. Serve hot topped with freshly grated Parmesan cheese.
