  • 2 cups shredded rotisserie chicken
  • 8 ounces cream cheese (room temperature)
  • 1½ cups sharp cheddar cheese (shredded)
  • 1 cup black beans (drained and rinsed)
  • 15.25 ounces sweet corn (drained)
  • 14.5 ounces diced tomatoes (drained)
  • 2 tablespoons taco seasoning
  • 1 cup fresh pico de gallo
  • 6 flour tortillas (burrito size)
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F.
  2. In a large mixing bowl, combine shredded chicken, cream cheese, cheddar cheese, black beans, sweet corn, diced tomatoes, taco seasoning, and pico de gallo until well mixed.
  3. Lay one flour tortilla on a flat surface, scoop about 1 cup of the filling into the center, fold in the sides, and roll tightly from the bottom.
  4. Spray the outsides of each burrito with cooking spray and place them in the preheated air fryer basket.
  5. Cook for 5 minutes; flip each burrito carefully, spray again with cooking spray, and cook for another 5 minutes until golden brown.
  6. Serve warm with additional pico de gallo and sour cream.
