  • 1 pound shrimp (peeled, deveined)
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • ½ teaspoon Sriracha (or more to taste)
  • 1 tablespoon honey
  • ½ cup buttermilk
  • 1 cup cornstarch
  • Canola oil (for frying)

Instructions

  1. In a small bowl, mix mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth. Set aside.
  2. In another bowl, pour buttermilk over the shrimp to coat.
  3. Place cornstarch in a third bowl for coating.
  4. Heat about 1 inch of canola oil in a deep frying pot to 375°F.
  5. Remove shrimp from buttermilk, allowing excess to drip off, then coat in cornstarch.
  6. Fry shrimp in batches for 1-2 minutes until golden brown; repeat with remaining shrimp.
