Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Lightly grease an 8×8-inch baking dish or line with parchment paper for easy removal.

Step 2: Mix the Wet Ingredients

  1. In a large mixing bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, cinnamon, and salt.

  2. Pour in the milk and mix until smooth and well combined.

Step 3: Add the Dry Ingredients

  1. Stir in the rolled oats and almond flour, mixing until the batter is evenly combined.

  2. Gently fold in the blueberries, being careful not to crush them (especially if using frozen).

Step 4: Bake the Casserole

  1. Pour the mixture into the prepared baking dish and spread it out evenly.
