  • 1 bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional)
  • 4 cups water or chicken broth
  • 1 cup stone-ground grits
  • 1 cup shredded sharp cheddar cheese (optional)

Instructions

  1. In a medium saucepan, bring water or chicken broth to a boil. Stir in salt, then gradually whisk in the grits. Reduce heat and cook for 20-25 minutes until thick and creamy. Stir in butter and cheese if desired.
  2. In a large skillet over medium-high heat, heat olive oil. Add beef strips, season with salt, pepper, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Sauté until browned and cooked through.
  3. Remove beef from skillet; add onions, bell peppers, and garlic to the same skillet and sauté until softened.
  4. Return beef to the skillet; add broth and mix well. Let simmer for a few minutes until the sauce thickens slightly.
  5. Serve grits on plates topped with the beef mixture, garnished with parsley or green onions if desired.
