Instructions
Step 1: Sauté the Vegetables
Heat olive oil in a large Dutch oven over medium heat.
Add the diced onion, bell pepper, and jalapeño. Cook for about 5 minutes until softened.
Stir in the minced garlic and sauté for another minute until fragrant.
Step 2: Add the Seasonings
Sprinkle in the Cajun seasoning, cumin, paprika, oregano, salt, and pepper.
Stir well to coat the veggies with spices and toast the seasonings slightly.
Step 3: Build the Chili
Add the shredded chicken, beans, diced green chilies, and corn.
Pour in the chicken broth and stir everything together.
Bring the chili to a gentle boil, then reduce heat to low and let it simmer uncovered for 15–20 minutes, allowing flavors to blend.
Step 4: Make it Creamy
In a small bowl, whisk together sour cream, milk, and cream cheese until smooth.
Slowly stir this mixture into the pot.
Continue to simmer for another 5–7 minutes until the chili is thickened and creamy.
Step 5: Adjust & Serve
Taste and adjust seasonings if needed—add more Cajun seasoning or salt to your liking.
Ladle the chili into bowls and top with shredded cheese, fresh cilantro, lime wedges, or tortilla chips.
Notes
Use Rotisserie Chicken – It’s a time-saver and adds deep flavor.
Adjust Spice – Control the heat by tweaking the jalapeño or Cajun seasoning.
Cream Cheese Tip – Soften it well to ensure it melts smoothly into the soup.
Simmer Gently – Letting the chili simmer brings out the best flavor.
Double Up – This chili freezes beautifully for later meals.
