Ingredients

- 1 cup Yellow Onion (diced)
- 1 cup Bell Pepper (diced)
- 2 cups Instant Rice
- 2 cups Chicken Broth
- 10 ounces Diced Tomatoes & Green Chilies (undrained)
- 10 ounces Red Enchilada Sauce
- 1 Taco Seasoning Packet
- 1 cup Colby Jack Cheese (shredded)
Instructions
- In a large skillet over medium heat, cook the ground beef with diced onion and bell pepper until browned. Drain excess grease and stir in taco seasoning.
