For the Dough:

  • 2¼ tsp active dry yeast (1 packet)

  • 1 cup warm milk (not hot)

  • 1 tbsp sugar

  • 3 cups all-purpose flour

  • 1 tsp salt

  • 2 tbsp olive oil

For the Garlic Butter Filling:

  • 60 g (¼ cup) unsalted butter, melted

  • 3 garlic cloves, minced

  • 1 tsp Italian seasoning or dried oregano

  • ¼ tsp salt

  • 2 tbsp fresh parsley or basil, finely chopped

For the Cheese Layer:

  • 1½ cups shredded mozzarella cheese

  • ½ cup shredded cheddar or Parmesan (optional for extra flavor)

For Brushing (after baking):

  • 1 tbsp melted butter

  • 1 tsp garlic powder

  • Pinch of sea salt

  • Extra parsley for garnish


Instructions

Step 1: Make the Dough

  1. In a large bowl, mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.

  2. Add flour, salt, and olive oil. Mix until a dough forms.

  3. Knead the dough for 5–7 minutes on a floured surface until smooth.

  4. Place in a greased bowl, cover, and let rise for 1 hour or until doubled.

Step 2: Prepare Garlic Butter

  1. While dough is rising, mix melted butter, minced garlic, herbs, and salt in a bowl.

  2. Set aside or refrigerate if making ahead.

Step 3: Roll and Fill

  1. Preheat oven to 180°C (350°F).

  2. Roll out dough into a large rectangle (about 9×13 inches).

  3. Brush with garlic butter mixture.

  4. Sprinkle evenly with mozzarella and other cheese, leaving a small border.

  5. Roll up tightly from the long edge like a jelly roll.

  6. Slice into 12 even pieces.

Step 4: Bake the Rollups

  1. Place rolls into a greased or parchment-lined baking dish.

  2. Bake for 20–25 minutes, or until golden and bubbly.

  3. Brush with melted butter mixed with garlic powder and sea salt right after baking.

Step 5: Serve and Enjoy

  1. Garnish with chopped parsley or basil.
