Ingredients
For the Bread:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- ½ cup buttermilk (or milk with 1 teaspoon vinegar)
- 1 ¼ cups chopped fresh or frozen cherries (patted dry)
- ½ cup sliced almonds
For the Almond Glaze (Optional):
- ½ cup powdered sugar
- 1 tablespoon milk
- ½ teaspoon almond extract
Instructions
Step 1: Preheat & Prepare
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan and line with parchment paper.
Step 2: Mix the Dry Ingredients
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
Step 3: Cream the Butter & Sugar
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs, one at a time, mixing well.
- Stir in vanilla extract and almond extract.
Step 4: Combine Wet & Dry Ingredients
- Add half of the flour mixture to the wet ingredients and mix.
- Pour in the buttermilk and stir.
- Add the remaining flour mixture and mix until just combined (do not overmix).
Step 5: Fold in Cherries & Almonds
- Gently fold in chopped cherries and sliced almonds.
Step 6: Bake the Bread
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
Step 7: Cool & Glaze
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
- If using glaze, mix powdered sugar, milk, and almond extract, then drizzle over cooled bread.
Notes
✔ Use Fresh or Frozen Cherries – If using frozen, thaw and pat dry to avoid excess moisture.
✔ Don’t Overmix – Overmixing makes the bread dense instead of soft.
✔ For Extra Crunch – Sprinkle sliced almonds on top before baking.
✔ Make It Healthier – Swap half the butter for unsweetened applesauce.
