Ingredients

For the Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ cup buttermilk (or milk with 1 teaspoon vinegar)
  • 1 ¼ cups chopped fresh or frozen cherries (patted dry)
  • ½ cup sliced almonds

For the Almond Glaze (Optional):

 

  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon almond extract

Instructions

Step 1: Preheat & Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan and line with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

Step 3: Cream the Butter & Sugar

  1. In a large bowl, beat butter and sugar until light and fluffy.
  2. Add eggs, one at a time, mixing well.
  3. Stir in vanilla extract and almond extract.

Step 4: Combine Wet & Dry Ingredients

  1. Add half of the flour mixture to the wet ingredients and mix.
  2. Pour in the buttermilk and stir.
  3. Add the remaining flour mixture and mix until just combined (do not overmix).

Step 5: Fold in Cherries & Almonds

  1. Gently fold in chopped cherries and sliced almonds.

Step 6: Bake the Bread

  1. Pour batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.

Step 7: Cool & Glaze

 

  1. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  2. If using glaze, mix powdered sugar, milk, and almond extract, then drizzle over cooled bread.

Notes

Use Fresh or Frozen Cherries – If using frozen, thaw and pat dry to avoid excess moisture.
Don’t Overmix – Overmixing makes the bread dense instead of soft.
For Extra Crunch – Sprinkle sliced almonds on top before baking.
Make It Healthier – Swap half the butter for unsweetened applesauce.
