Ingredients

Scale

For the Soup:

  • 2 tbsp butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cups cooked chicken breast, shredded or diced

  • 1 cup diced cooked beef ham

  • 4 cups chicken broth (low-sodium)

  • 1 cup milk (whole or 2%)

  • 1 cup heavy cream

  • 1 ½ cups shredded Swiss cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup all-purpose flour

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp Dijon mustard

  • ¼ tsp paprika (optional for extra flavor)

Optional Garnishes:

  • Chopped fresh parsley

  • Croutons or toasted bread cubes

  • Extra shredded cheese

Instructions

Step 1: Sauté the Aromatics
In a large soup pot, melt butter over medium heat.
Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
Stir in the garlic and cook for another 30 seconds until fragrant.

Step 2: Make the Roux
Sprinkle the flour over the onions and garlic, stirring constantly to form a roux.
Cook for 1-2 minutes until the flour is lightly golden.

Step 3: Add the Liquids
Slowly whisk in the chicken broth, making sure to break up any lumps.
Add the milk and heavy cream, whisking continuously until smooth.

Step 4: Stir in the Chicken and Beef Ham
Add the shredded chicken and diced beef ham to the pot.
Season with salt, black pepper, Dijon mustard, and paprika if using.
Bring the soup to a gentle simmer.

Step 5: Add the Cheese
Reduce the heat to low.
Stir in the Swiss and mozzarella cheeses gradually, allowing them to melt into the soup.
Simmer for 5-7 minutes until the soup is creamy and heated through.

Step 6: Taste and Serve
Taste the soup and adjust seasoning if needed.
Ladle into bowls and garnish with chopped parsley, croutons, or extra cheese if desired.

Notes

Use Cooked Chicken – Rotisserie chicken works great for saving time.
Add Cheese Slowly – Stir in cheese little by little to prevent clumping.
Keep the Heat Low – Once the dairy is added, keep the heat gentle to avoid curdling.
Customize It – Add some steamed broccoli or spinach for extra color and nutrition.
Serve with Bread – A warm, crusty baguette is perfect for dipping into the creamy soup.
