  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons water
  • 1 tablespoon finely chopped fresh ginger
  • 3 cloves garlic (minced)
  • Zest of 1 orange
  • 2 teaspoons cornstarch
  • Pinch red pepper flakes
  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 2 medium carrots (finely chopped)
  • 1 red bell pepper (finely chopped)
  • 3 green onions (white and light green parts only, thinly sliced)
  • ½ cup cashews (or peanuts)
  • 16 leaves butter lettuce (or iceberg or romaine)

Instructions

  1. Prepare the sauce by whisking together low sodium soy sauce, honey, rice vinegar, water, minced ginger, garlic, orange zest, cornstarch, and red pepper flakes in a bowl.
  2. Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned (about 5 minutes).
  3. Stir in chopped carrots and red bell pepper; cook until vegetables are tender.
  4. Pour the prepared sauce into the skillet and stir until thickened (1-2 minutes). Mix in sliced green onions and cashews or peanuts.
  5. Serve the chicken mixture in butter lettuce leaves for wrapping.
