For the Chocolate Chip Cookie Layer:

  • 1 cup unsalted butter, softened

  • ¾ cup brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2¼ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 cups semi-sweet chocolate chips

For the Cheesecake Filling:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract


Instructions

Step 1: Prepare the Baking Pan

  1. Preheat oven to 350°F (175°C).

  2. Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy lifting.

Step 2: Make the Cookie Dough
3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
4. Beat in eggs one at a time, then add vanilla extract.
5. In a separate bowl, whisk together flour, baking soda, and salt.
6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
7. Fold in the chocolate chips.

Step 3: Make the Cheesecake Filling
8. In a medium bowl, beat cream cheese until smooth.
9. Add sugar, egg, and vanilla extract, and mix until fully incorporated and creamy.

Step 4: Assemble the Bars
10. Press half of the cookie dough evenly into the bottom of the prepared pan.
11. Pour and spread the cheesecake filling over the cookie base.
12. Drop spoonfuls of the remaining cookie dough over the cheesecake layer. Gently spread or flatten them; it’s okay if some cheesecake peeks through.

Step 5: Bake
13. Bake for 35–40 minutes, or until the top is golden brown and the center is set.
14. Allow to cool completely in the pan, then refrigerate for at least 2 hours for clean slicing.

 

Step 6: Slice & Serve
15. Use the parchment overhang to lift the bars out of the pan.
16. Slice into squares or rectangles and serve chilled or at room temperature.

Notes

Room Temperature Ingredients – Ensure your cream cheese and eggs are softened for smooth mixing.
Don’t Overmix – Mix until ingredients are combined to avoid a tough texture.
Chill Before Cutting – Refrigerate for clean, neat slices.
Use Parchment Paper – It makes lifting and cutting the bars much easier.
Add Extra Chips – Sprinkle a few chocolate chips on top before baking for a pretty finish.
