  • 1 lb large shrimp, cleaned
  • 1 cup unsweetened coconut flakes
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 1/2 cup beef broth
  • 3 tbsp cornstarch
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1/8 tsp garlic powder
  • 1 cup vegetable oil for frying
  • Sweet chili sauce for dipping

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat until hot but not smoking.
  2. In a bowl, combine coconut flakes and panko breadcrumbs.
  3. In another bowl, mix cornstarch; in a third bowl, whisk together flour, baking powder, garlic powder, egg, and beef broth until smooth.
  4. Coat each shrimp first in cornstarch, then dip into the batter mixture, and finally roll in the coconut-panko mixture.
  5. Fry the shrimp in batches for about 3 minutes on each side until golden brown.
  6. Drain excess oil on paper towels and serve with sweet chili sauce.
