  • 1/2 cup half-and-half or heavy cream
  • 8 oz jar sun-dried tomatoes packed in oil (drained)
  • 1/2 cup freshly grated parmesan cheese
  • Zest and juice of 1 lemon
  • Fresh basil for garnish
  • 1 tsp Italian seasoning
  • 1/2 tsp freshly cracked pepper
  • 1/4 tsp salt (adjust to taste)
  • Optional: 1/2 tsp red pepper flakes

Instructions

  1. In a large deep skillet over medium-low heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Pour in the white grape juice and bring to a simmer. Reduce by half, approximately 3 to 5 minutes.
  3. Stir in the chicken stock, half-and-half (or heavy cream), Italian seasoning, sun-dried tomatoes, cracked pepper, and salt. Increase heat to medium-low until it reaches a low boil while stirring occasionally.
  4. Add the dry spaghetti or angel hair pasta into the sauce mixture. Let it sit for about 30 seconds before gently stirring it into the liquid.
  5. Cook until the pasta is al dente, around 5 minutes. Stir frequently to prevent sticking.
  6. Remove from heat; mix in grated parmesan cheese until melted. Zest lemon over pasta and squeeze in juice before serving with fresh basil on top.
