  • 4 garlic cloves (minced)
  • 1 green bell pepper (chopped)
  • 1/2 medium white onion (chopped)
  • 1 can crushed tomatoes (14.5 ounces)
  • 1/2 pound raw boneless, skinless chicken breast
  • 5 cups low sodium chicken broth
  • 1/2 cup shredded Parmesan cheese
  • Uncooked dry gemelli or penne pasta

Instructions

  1. In a slow cooker, combine minced garlic, chopped bell pepper, chopped onion, crushed tomatoes, raw chicken breast, low sodium chicken broth, shredded Parmesan cheese, basil, oregano, kosher salt, ground black pepper, and red pepper flakes. Stir well.
  2. Cook on low for 7.5 hours or high for 3.5 hours.
  3. Once cooked, shred the chicken using two forks and return it to the slow cooker.
  4. Stir in uncooked pasta and set to high; cook for an additional 20-30 minutes until pasta is al dente.
  5. If desired, stir in unsalted butter for extra richness; adjust consistency with additional broth if needed before serving.
