Ingredients
- 1 baguette, sliced into 1” rounds
- 2 tablespoons olive oil
- 1 1/2 cups whole milk ricotta
- 1 tablespoon dill pickle brine
- 2 garlic cloves, finely minced
- 2 teaspoons fresh dill, chopped (plus extra for garnish)
- Juice of 1 lemon
- 5 crunchy dill pickles, sliced into 1/2" rounds
- Kosher salt and freshly cracked black pepper
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the ricotta cheese, dill pickle brine, minced garlic, chopped fresh dill, and lemon juice. Season with kosher salt to taste. Refrigerate until ready to use.
- Place the baguette slices on the prepared baking sheet. Drizzle each slice with olive oil and sprinkle with salt and pepper. Bake for about 8-10 minutes or until lightly golden.
- Remove from the oven and top each slice with a dollop of the ricotta mixture and two slices of crunchy dill pickles.
