Ingredients
- 1 baguette, sliced into 1” rounds
- 2 tablespoons olive oil
- 1 1/2 cups whole milk ricotta
- 1 tablespoon dill pickle brine
- 2 garlic cloves, finely minced
- 2 teaspoons fresh dill, chopped
- Juice of 1 lemon
- 5 crunchy dill pickles, sliced into 1/2" rounds
- Kosher salt and freshly cracked black pepper
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together ricotta, dill pickle brine, garlic, chopped dill, lemon juice, and salt. Refrigerate until ready to use.
- Arrange baguette slices on the baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for about 8 – 10 minutes until lightly golden.
- Remove from oven and top each crostini with a dollop of the ricotta mixture and two slices of dill pickle. Sprinkle with black pepper.
- Garnish with extra dill and drizzle with olive oil if desired before serving.
