For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • 2 tbsp olive oil

  • 1 tbsp butter

For the Mushroom Filling:

  • 2 tbsp butter

  • 2 cups mushrooms, finely chopped (cremini or button)

  • 3 cloves garlic, minced

  • ¼ cup Parmesan cheese, grated

  • ¼ cup mozzarella cheese, shredded

  • 1 tbsp fresh parsley, chopped

  • ½ tsp dried thyme

  • Salt and pepper to taste

Optional Garnishes:

  • Extra chopped parsley

  • Fresh lemon wedges


Instructions

Step 1: Prepare the Chicken
Preheat your oven to 375°F (190°C).
Use a sharp knife to cut a pocket into the side of each chicken breast without cutting all the way through.
Season the chicken on both sides with salt, pepper, and paprika.

Step 2: Make the Mushroom Filling
In a skillet, melt 2 tablespoons of butter over medium heat.
Add the chopped mushrooms and cook for 5-7 minutes until tender and any liquid evaporates.
Stir in the garlic, thyme, salt, and pepper, and cook for another 1-2 minutes until fragrant.
Remove from heat and mix in the Parmesan, mozzarella, and parsley. Let cool slightly.

Step 3: Stuff the Chicken
Spoon the mushroom mixture into each chicken pocket.
Secure with toothpicks if needed to keep the filling inside.

Step 4: Sear the Chicken
Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
Add the stuffed chicken breasts and sear for 2-3 minutes per side until golden brown.

Step 5: Bake the Chicken
Transfer the skillet to the preheated oven (or place the chicken in a baking dish).
Bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Step 6: Garnish and Serve
Remove toothpicks carefully.
Sprinkle with fresh parsley and serve with lemon wedges if desired.
