Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for greasing the pan)
  • 1/4 cup marinara sauce or tomato sauce (for topping, optional)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C). Grease a loaf pan or baking dish with olive oil to prevent sticking.

Step 2: Prepare the Meatloaf Mixture

  • In a large mixing bowl, combine the ground chicken, breadcrumbs, grated parmesan cheese, minced garlic, milk, egg, parsley, oregano, onion powder, salt, and pepper.
  • Use your hands or a spoon to mix everything together until just combined—don’t overwork the mixture to keep the meatloaf tender.

Step 3: Shape the Meatloaf

  • Transfer the meat mixture to the prepared loaf pan or form it into a loaf shape on a baking sheet.
  • If desired, spread a thin layer of marinara or tomato sauce over the top of the meatloaf for added flavor and moisture.

Step 4: Bake the Meatloaf

  • Bake in the preheated oven for 40-45 minutes, or until the internal temperature reaches 165°F (75°C) and the meatloaf is cooked through.
  • If you added sauce on top, it should be bubbly and lightly browned.

Step 5: Cool and Serve

 

  • Let the meatloaf rest for 5-10 minutes after removing it from the oven to allow the juices to settle.
  • Slice the meatloaf into thick, hearty pieces and serve warm.

Notes

  • Don’t Overmix: Be sure to mix the ingredients just until combined. Overmixing can make the meatloaf dense.
  • Use Fresh Herbs: Fresh parsley adds a burst of flavor, but dried herbs like thyme or basil also work well.
  • Moisture: If the mixture feels too dry, add a splash more milk. You want the mixture to be moist but not too loose.
  • Add Veggies: You can mix in finely chopped vegetables like onions, bell peppers, or zucchini for added texture and flavor.
  • Make it Ahead: Prepare the meatloaf mixture ahead of time, shape it, and store it in the fridge until you’re ready to bake.
