Ingredients
For the Scrambled Eggs:
6 large eggs
3 tbsp unsalted butter
Salt and freshly ground black pepper, to taste
To Finish:
1 tbsp crème fraîche (or sour cream or Greek yogurt)
1 tbsp chopped fresh chives (optional)

Instructions
Step 1: Crack and Prep the Eggs

Crack all eggs into a cold nonstick skillet or saucepan—do not beat them beforehand.

Add the butter cubes directly into the eggs.

Place the pan on medium-high heat.
Step 2: Cook with Control

Stir continuously with a spatula, scraping the bottom of the pan constantly.

After about 30 seconds, remove the pan from the heat and continue stirring for 10–15 seconds.

Return to the heat and repeat this process (on and off) for about 3–4 minutes.

The eggs will slowly thicken and form soft curds with a creamy texture.
Step 3: Finish the Eggs

Once the eggs are just set but still soft and glossy, remove from heat completely.

Stir in the crème fraîche to cool and stop the cooking.
