1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 small red onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

2 tbsp olive oil

1 tsp paprika

½ tsp cumin

½ tsp chili powder

½ tsp salt

¼ tsp black pepper

2 cups baby spinach

1 tbsp chopped fresh parsley (for garnish)

Instructions
Step 1: Cook the Sweet Potatoes
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add diced sweet potatoes and cook for 7–8 minutes, stirring occasionally, until lightly browned and tender.
Transfer sweet potatoes to a plate and set aside.
Step 2: Cook the Turkey
Add the remaining 1 tablespoon of olive oil to the skillet.
Add diced onion and cook for 2–3 minutes until softened.
Add the ground turkey, breaking it apart with a spoon, and cook for 6–8 minutes until browned and cooked through.
Step 3: Add the Veggies and Spices
Stir in the garlic and diced red bell pepper.
Season with paprika, cumin, chili powder, salt, and black pepper.
Cook for another 2–3 minutes until the pepper is tender.
Step 4: Combine Everything
Return the cooked sweet potatoes to the skillet.
Add the spinach and stir until wilted, about 1–2 minutes.
Taste and adjust seasoning as needed.
Step 5: Garnish & Serve
Sprinkle chopped parsley on top.
Serve hot, optionally with avocado slices or a squeeze of lime for extra freshness.
