  • 16 ounces rotini pasta
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 large carrots, chopped into ¼-inch pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 15 ounce can tomato sauce
  • 15 ounce can diced tomatoes
  • 8 ounces shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F and lightly grease a 13×9-inch baking dish.
  2. Boil salted water in a large pot and cook the rotini pasta according to package directions. Drain and set aside.
  3. In a skillet over medium heat, sauté olive oil with onions, carrots, and bell peppers until tender (about 8 minutes).
  4. Add ground beef to the skillet; cook until browned while breaking it apart. Drain excess grease.
  5. Stir in minced garlic and seasonings; cook for another minute.
  6. Mix in tomato sauce and diced tomatoes followed by about one-third of the shredded cheddar cheese and cooked pasta.
  7. Pour the mixture into the baking dish and top with remaining cheese.
  8. Bake uncovered for about 20 minutes or until the cheese is melted and golden.
