• 2 cups all-purpose flour
• 1 tbsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• ½ tsp black pepper
• 1 tbsp chopped fresh herbs (like chives, parsley, thyme, or rosemary) or 1 tsp dried herbs
• ½ cup cold unsalted butter, cubed
• 1 cup cottage cheese
• ¼ cup milk (or buttermilk)
• Optional: ¼ cup shredded sharp cheddar (for extra richness)
• Optional: Melted butter for brushing the tops
Instructions
Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.
Step 2: Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and herbs.
Step 3: Cut in the Butter
Add the cold cubed butter to the flour mixture.
Use a pastry cutter or fork to cut in the butter until the mixture resembles coarse crumbs.
Step 4: Add Cottage Cheese and Milk
Stir in the cottage cheese and milk just until the dough comes together.
If adding shredded cheese, fold it in now.
Do not overmix—dough should be slightly sticky and soft.
Step 5: Shape the Biscuits
Turn the dough onto a lightly floured surface.
Gently pat or roll it to about ¾-inch thickness.
Use a biscuit cutter or glass to cut out 2-inch rounds.
Gather scraps and repeat as needed.
Step 6: Bake Until Golden
Place biscuits on the prepared baking sheet, about 1 inch apart.
Bake for 12–15 minutes, or until golden brown on top.
Brush with melted butter right after baking, if desired.
