- In a large bowl, combine beef chunks with flour, salt, and pepper until evenly coated.
- Heat a Dutch oven over medium-high heat and add 2 tablespoons of oil. Brown the beef in batches for about 5 minutes per side; set aside.
- Deglaze the pot with red grape juice, scraping up any browned bits.
- Add butter to melt, then sauté diced onion and minced garlic until fragrant.
- Stir in Worcestershire sauce and tomato paste; mix well before adding the beef broth.
- Return the browned beef to the pot along with quartered onion, whole garlic cloves, bay leaves, and thyme.
