  • 1 cup BBQ sauce (divided)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 pounds boneless skinless chicken breasts or thighs
  • Burger buns (optional, for serving)

Instructions

  1. In your Instant Pot, mix together chicken broth, ½ cup BBQ sauce, apple cider vinegar, garlic powder, chili powder, salt, and black pepper.
  2. Place the chicken into the sauce mixture.
  3. Secure the lid of the Instant Pot and set the steam release valve to sealing position. Cook on high pressure for 16 minutes.
  4. After cooking, allow the pressure to release naturally for 10 minutes before carefully moving the steam release valve to venting.
  5. Once all steam escapes, check that the chicken has reached at least 165°F. Remove and shred using forks, mixing in additional BBQ sauce if desired.
