  • 3 cloves garlic (minced)
  • ½ cup Panko breadcrumbs
  • 2 large eggs
  • ½ cup ketchup (plus extra for serving)
  • 2 ½ pounds Yukon gold potatoes
  • 3 tablespoons unsalted butter
  • ½ cup warmed milk

Instructions

  1. Gather all ingredients and measure them out.
  2. In a mixing bowl, combine ground beef, onion, garlic, Panko breadcrumbs, eggs, ketchup, thyme, garlic powder, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it on the Instant Pot’s trivet.
  4. Quarter the Yukon gold potatoes and surround them with the meatloaf in the pot. Add water as per instructions.
  5. Seal the lid and set to high pressure for 30 minutes; allow natural release for 10 minutes before quick-releasing any remaining pressure.
  6. Remove the meatloaf and drain excess water from the potatoes; mash with butter and warmed milk until creamy.
  7. Serve slices of meatloaf alongside fluffy mashed potatoes.
