- 1 1/2 pounds russet potatoes (quartered)
- 12.8 oz smoked chicken sausage (sliced)
- 1 1/2 pounds large shrimp (shell-on)
- 3 ears corn (halved)
- 1 bottle light beef broth or water
- 1 tablespoon cajun seasoning
- Fresh parsley leaves (for garnish)
- Lemon wedges (for serving)
Instructions
- Wash vegetables thoroughly, quarter the potatoes, halve the corn, and slice the sausage.
- Layer quartered potatoes in the Instant Pot, followed by sliced sausage, bay leaves, garlic cloves, hot sauce, onion powder, garlic powder, and cajun seasoning.
- Pour in light beef broth and water carefully over the ingredients.
- Seal the Instant Pot lid and set to manual high pressure for 2 minutes. Once done, use quick release to relieve pressure.
- Add corn and shrimp on top, close the lid again, and steam for an additional 5 minutes without pressure.
- In a bowl, mix melted butter with garlic powder and cajun seasoning; drizzle over your boil before serving. Garnish with parsley and lemon wedges.
