  • 2 cups all-purpose flour
  • 1 cup melted butter
  • 1/4 cup granulated sugar
  • 1/2 cup finely chopped pecans
  • 16 ounces softened cream cheese
  • 1 cup powdered sugar
  • Juice of 1 lemon
  • 2 packages instant lemon pudding mix (3.4 ounces each)
  • 2 cups milk
  • 8 ounces whipped topping

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix melted butter, flour, sugar, and pecans until combined. Press into the bottom of a 9×13 inch baking dish and bake for about 20 minutes until golden.
  3. In another bowl, beat softened cream cheese and powdered sugar until smooth. Add lemon juice and mix well. Spread over the cooled crust.
  4. Whisk together pudding mix and milk in another bowl until thickened. Pour over the cream cheese layer and spread evenly.
  5. Top with whipped topping and sprinkle with chopped pecans if desired.
  6. Chill in the refrigerator for at least an hour before serving.
