- 1–2 tablespoons cajun seasoning or all-purpose chicken seasoning (use your favorite)
- 2 tablespoons olive oil
- 4 tablespoons butter
- 6 cloves fresh garlic, minced
- 3/4 cup white grape juice
- 3/4 cup chicken stock
- 3 tablespoons fresh lemon juice + zest of one lemon
- 1 cup half-and-half
- 1/2 lb angel hair pasta
- 2/3 cup freshly shredded Parmesan cheese
- Fresh parsley to garnish
- Red pepper flakes to taste
- Salt and pepper to taste (about 1/2 tsp of each)
Instructions
- Season chicken on both sides with all-purpose seasoning. Heat olive oil in a large skillet over medium heat and add chicken. Cook undisturbed for 3-4 minutes until golden brown.
- Flip the chicken once and add 1/3 cup chicken stock. Cover and simmer for an additional 5 minutes until fully cooked. Remove and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant.
- Stir in white grape juice, then add chicken stock and lemon juice. Bring to a gentle boil before slowly adding half-and-half.
- Add angel hair pasta; simmer for about 4-5 minutes while stirring until al dente.
- Gradually stir in Parmesan cheese until melted and the sauce thickens.
- Garnish with parsley, lemon zest, and red pepper flakes before serving over sliced chicken.
