- 4 lobster tails
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion (finely chopped)
- 2 carrots (peeled and finely chopped)
- 2 stalks celery (finely chopped)
- 4 cloves garlic (minced)
- 1 teaspoon chicken bouillon powder
- 1/4 teaspoon cracked pepper
- 3/4 – 1 cup heavy cream
- 1 1/4 cup dry white grape juice or apple juice
- 4 cups seafood stock
Instructions
- Boil a large pot of water, add lobster tails, and cook for 5-7 minutes until bright red. Cool slightly, then remove the meat from shells and chop into chunks.
- In a heavy-bottomed pot, melt butter and olive oil over medium heat. Sauté onion, carrots, and celery for about 5-7 minutes until softened.
- Add minced garlic, herbs, bouillon powder, salt, and pepper. Cook for one more minute until fragrant.
- Stir in tomato paste; cook for another minute before adding flour to thicken.
- Gradually pour in grape juice followed by seafood stock while whisking. Bring to a boil then reduce to simmer for about 30 minutes.
- Blend the mixture until smooth using an immersion blender or standard blender. Return to low heat.
- Stir in heavy cream and reserved lobster meat; warm through before serving.
