Ingredients

3 large eggs, separated

3 tbsp plain Greek yogurt (full-fat or low-fat)

¼ tsp cream of tartar

¼ tsp salt

Instructions
Step 1: Preheat & Prepare Pan
Preheat your oven to 300°F (150°C).
Line a baking sheet with parchment paper.
Step 2: Separate the Eggs
Carefully separate egg whites from yolks.
Place egg whites in one bowl and yolks in another. Make sure no yolk gets into the whites.
Step 3: Beat the Egg Whites
Add cream of tartar to the egg whites.
Beat with a hand mixer until stiff peaks form—this takes about 3–4 minutes. The peaks should hold their shape when you lift the beaters.
Step 4: Mix the Yolks & Yogurt
To the yolks, add Greek yogurt, salt, and any optional herbs or spices.
Whisk until smooth and well combined.
Step 5: Fold in the Whites
Gently fold the egg whites into the yolk mixture in 3 parts using a spatula.
Be careful not to deflate the whites—you want to keep as much air as possible.
Step 6: Shape the Bread Rounds
Spoon 6 equal mounds of the mixture onto your prepared baking sheet.
Use the back of the spoon to smooth into round, flat circles about ½ inch thick.
Step 7: Bake to Perfection
Bake for 25–30 minutes, or until golden on top and firm to the touch.
Let them cool completely on the baking sheet. They will firm up more as they cool.
Step 8: Serve or Store
Use immediately, or store in an airtight container once cooled.
Notes
Use Fresh Eggs – For better volume and structure.
Don’t Skip the Cream of Tartar – It stabilizes the egg whites.
Be Gentle – Fold the whites carefully to maintain fluffiness.
Let Them Cool – They may seem soft out of the oven, but they’ll firm up as they cool.
