  • 2 cups Elbow Pasta
  • 12 ounces Evaporated Milk
  • 2 cups Cheddar Cheese (shredded)
  • 2 cups Colby Jack Cheese (shredded)
  • 2 tablespoons Butter
  • 1 pound Ground Beef
  • 1/2 cup Yellow Onion (diced)
  • 1/2 cup Bell Pepper (diced)
  • 1 teaspoon Italian Seasoning
  • 24 ounces Pasta Sauce
  • 15 ounces Petite Diced Tomatoes (drained)

Instructions

  1. Boil pasta in a large pot until al dente, about 9–10 minutes.
  2. In the same pot, add butter and evaporated milk; heat until just below boiling. Stir in cheeses until melted.
  3. In a skillet, cook ground beef with onion and bell pepper until browned; season and mix in pasta sauce and tomatoes.
  4. Layer the bottom of a casserole dish with macaroni, followed by meat sauce, then top with remaining macaroni and cheese.
  5. Bake uncovered at 350°F for 15 minutes; broil for an additional 2–3 minutes until golden brown. Let rest before serving.
