Ingredients
- 2 cups long grain white rice
- 1 ½ tablespoons olive oil
- ¾ cup chopped onion (white or yellow)
- 2 cloves garlic (minced)
- 2 ½ cups low-sodium chicken broth or vegetable broth
- 1 teaspoon salt (or to taste)
- 1 ½ teaspoons chili powder
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- 8 ounces tomato sauce
- Chopped fresh cilantro (optional, for serving)
Instructions
- Rinse the rice under cold water using a fine mesh strainer; drain well.
- Set the Instant Pot to the sauté function. Heat olive oil and add the onion; sauté for about 3 minutes until softened. Add minced garlic and cook for an additional 30 seconds before turning off the sauté function.
- Pour in the broth, scraping any bits from the bottom of the pot.
- Add salt, chili powder, ground cumin, garlic powder, dried oregano, tomato sauce, and rinsed rice. Stir to combine.
- Secure the lid and set the steam release valve to sealing. Pressure cook on high for 4 minutes (note it takes about 15 minutes for the pot to reach pressure).
- Once cooking is complete, allow for natural pressure release for 15 minutes before carefully venting any remaining steam.
- Open the lid and fluff the rice with a fork. Serve warm with cilantro if desired.
