  • 2 cups long grain white rice
  • 1 ½ tablespoons olive oil
  • ¾ cup chopped onion (white or yellow)
  • 2 cloves garlic (minced)
  • 2 ½ cups low-sodium chicken broth or vegetable broth
  • 1 teaspoon salt (or to taste)
  • 1 ½ teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 8 ounces tomato sauce
  • Chopped fresh cilantro (optional, for serving)

Instructions

  1. Rinse the rice under cold water using a fine mesh strainer; drain well.
  2. Set the Instant Pot to the sauté function. Heat olive oil and add the onion; sauté for about 3 minutes until softened. Add minced garlic and cook for an additional 30 seconds before turning off the sauté function.
  3. Pour in the broth, scraping any bits from the bottom of the pot.
  4. Add salt, chili powder, ground cumin, garlic powder, dried oregano, tomato sauce, and rinsed rice. Stir to combine.
  5. Secure the lid and set the steam release valve to sealing. Pressure cook on high for 4 minutes (note it takes about 15 minutes for the pot to reach pressure).
  6. Once cooking is complete, allow for natural pressure release for 15 minutes before carefully venting any remaining steam.
  7. Open the lid and fluff the rice with a fork. Serve warm with cilantro if desired.
