- 1–1/2 pounds boneless skinless chicken breasts or thighs (cut into bite-size pieces)
- 2 cups fresh or canned pineapple (cut into bite-size pieces)
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- ¾ cup pineapple juice
- ¼ cup soy sauce
- 2/3 cup chicken broth (divided)
- 1/3 cup hoisin sauce
- ¼ cup brown sugar
- 2 teaspoons cornstarch
- 2 teaspoons cold water
- 2 tablespoons sesame seeds
- Salt and pepper (to taste)
- Chopped green onion (for garnish)
Instructions
- Pat the chicken dry and season with salt and pepper.
- In a large pan, heat vegetable oil over medium-high heat. Add chicken and cook until browned, around 6–8 minutes.
- Deglaze the pan with ¼ cup of chicken broth, then add garlic and ginger, cooking for another 30 seconds.
- In a small bowl, mix pineapple juice, soy sauce, remaining broth, hoisin sauce, and brown sugar until combined.
- Pour the sauce into the pan with the chicken and bring to a simmer.
- Mix cornstarch with cold water in another bowl; add this to the pan while stirring continuously until thickened.
- Garnish with sesame seeds and serve over rice or your choice of side.
