Ingredients
- 1 tbsp Hellmann’s or Best Foods Real Mayonnaise
- 2 slices crusty whole grain bread
- 1 oz sliced low-fat white cheddar cheese
- 1 cup sliced roasted vegetables (like bell peppers, eggplant, zucchini, squash)
Instructions
- Preheat oven to 400°F (200°C). Brush chopped vegetables with olive oil and season with salt and pepper. Roast on a baking sheet until golden and tender.
- Spread mayonnaise on one slice of bread and place it mayonnaise-side down in a preheated skillet. Add cheese on top.
- Once vegetables are roasted, layer them over the cheese.
- Spread mayonnaise on another slice of bread and place it mayonnaise-side up atop the veggies. Cook until golden brown on one side (about 3-4 minutes), then flip and cook until the other side is browned and cheese is melted.
